One of the easiest vegan meals I make quite frequently are TVP (Textured Vegetable Protein) tacos.
I sauté some onions in Olive Oil then I add the TVP. I reconstitute the TVP granules with vegetable broth and add taco seasoning. I make my own taco seasoning because the stuff you buy at the store has too much sodium.
Takes a whopping 15 min to make!
