A lovely morning for some Soyrizo! I don’t think I have emphasized enough (except in my Chili post) how much I LOVE Soyrizo! Whoever made this stuff, I owe you my life. Well not really, but you get it now.
Anywho, the other morning I was in the mood for a lovely, warm breakfast. I never have time during the weekday mornings to cook (I normally juice), so this was a treat! My belly agreed. This is so simple and delish! We had plenty of leftovers too! You can use any veggies you like. Here is what I used:
1 small sweet onion, chopped
1 small Garlic clove, minced
1 small carton of White Button Mushrooms, sliced
1 Yellow Bell Pepper, chopped
½ link of Melissa’s Soyrizo. (Obviously you can use any brand you want)
Sauté the veggies in some olive oil, then add the Soyrizo.
Cook for 5 min.
We had plenty of leftovers 🙂
Serve on warm tortilla’s with your favorite hot sauce. Enjoy!
