It has been quite “chili” out (12° this morning!), so what’s better than a big bowl of Chili?! I finally found my favorite Soyrizo out here, Melissa’s®. I highly recommend you find one that has a reddish color to it. That means more lovely spices! It really makes the Chili so delicious! Hope you like and please feel free to leave comments/feedback! 1 small Sweet Onion, chopped
2-3 cloves Garlic, minced
½ pack Melissa’s® Soyrizo (or other brand of choice)
1 Tbsp Olive Oil
½ cup Red wine
2 cans Red Beans, drained
1 can Pinto Beans, drained
1 can Diced Tomatoes, drained
2 Cups Better Than Bouillon® – No Chicken Base broth
2 Tbsp Tomato Paste
½ tsp Chili Powder (you can obviously add more if you like the extra kick!)
¼ tsp Cumin
Dash Cayenne Pepper
Salt & Pepper to taste
Mmmm – sounds delicious! Have you ever tried the soy chorizo from Trader Joe’s? Brent and I are obsessed with it! It is super tasty and really inexpensive!
